This easy Rum Blue Island Cocktail is like a taste of the tropics! Made with coconut, citrus, fruity flavors and rum, this libation is smooth and fabulously refreshing!

How was everyone's 4th of July weekend? Did you celebrate and have a good 'ole time? Did you:

Set off pretty fireworks that actually went boom?

Spend quality time with friends and family?

Whatever you did, I hope it was fantastically fun. But, I hope you have a little bit more chutzpah to party like its 1999, because today is my birthday!

Normally, I wouldn't be all that thrilled about being a year older, but I'm pretty sure I am aging backwards.

Okay, no I'm not. I wish.

However, some super sweet older gentleman (with perfect 20/20 vision I might add) stopped me in the middle of the produce isle the other day to comment on my hat (he liked it, so he had good taste as well).

We proceeded to chit chat a bit and he asked me how old I was… as he was confused and looking around for my parents or chaperone because he didn't want to leave me roaming the place unattended.

When I told him my age, he looked like he was going to have a heart attack. He said he couldn't believe it! He thought I was 18-ish. Lol.

Obviously, I immediately wanted to hug him and make him my bestie for life. 🙂

Moral of the story:  Age is like beauty, it is in the eye of the beholder, and you really are only as old as you feel.

Anyways, so today, on the start of my 32nd year of life, we are going to celebrate me, my supa' youthful appearance and all around awesomeness with a cocktail.

Easy Rum Blue Island Cocktail

This easy island cocktail is a tropical paradise for your palate.

And, since I can't be on a remote island, soaking up the sun, I figured I can at least use my imagination as I sip this pretty concoction (and force Boy to massage my feet).

This libation is boozy (thanks to the rum), coconut-y, citrusy, fruity, and refreshing.

The color of this rum blue island cocktail is also pretty and appropriately garnished with a tropical umbrella, making it the perfect way to imbibe and celebrate the one day of the year where it is all about me! 🙂

So, if today being Monday isn't reason enough to partake in happy hour, hopefully celebrating life is (mine specifically, wink wink).

Blue Island Splash

This Blue Island Splash is like a taste of the tropics! Filled with coconut, citrus and fruity flavors, this libation is fabulously refreshing!

Prep Time 5 mins

Total Time 5 mins

  • 1 Oz Malibu Coconut Rum
  • 1 ½ Oz White Rum
  • 1 Oz Blue Curacao
  • 1 ½ oz Pineapple Juice
  • 1 Oz Sprite (or coconut water)
  • Maraschino Cherries – for garnish (optional)
  • Combine all ingredients except the sprite in a cocktail shaker.

  • Fill with ice. Shake to combine. Fill two small glasses with ice. Use strainer to divide cocktail among two glasses. Top each with half shot of sprite. Garnish with cherries.

  • Enjoy!
